Ingredients

Scale
  • 2 pounds chicken thighs
  • 1 cup buttermilk
  • 1 tablespoon fish sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 4 burger buns
  • 1 cup slaw mix
  • 1/4 cup Thai chili mayo
  • 2 tablespoons cilantro, chopped

Instructions

  1. Marinate the chicken thighs in buttermilk, fish sauce, garlic powder, onion powder, and paprika for at least 2 hours, preferably overnight.
  2. In a separate bowl, mix flour and salt. Dredge marinated chicken in the flour mixture.
  3. Heat oil in a deep frying pan over medium-high heat. Fry the chicken until golden brown and cooked through, about 6-8 minutes per side.
  4. Toast the burger buns in the same oil or on a skillet until crispy.
  5. Assemble each sandwich with fried chicken, slaw mix, Thai chili mayo, and cilantro on the bun.
  6. Serve hot and enjoy!
