  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup chopped pecans
  • 1 cup corn syrup
  • ½ cup packed brown sugar
  • 1 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  3. In a large bowl, beat the cream cheese and granulated sugar until smooth. Add vanilla and eggs, one at a time, mixing well after each addition.
  4. Stir in chopped pecans.
  5. Pour the cream cheese mixture over the crust.
  6. In another bowl, mix corn syrup, brown sugar, and salt. Pour over the cheesecake layer.
  7. Bake for 50-60 minutes, or until set. Allow to cool before refrigerating for at least 4 hours.
  8. Slice and serve chilled.
