Delicious mini muffins that combine the flavors of pancakes with turkey bacon and chicken ham for a unique treat.

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/2 cup turkey bacon, cooked and chopped
  • 1/2 cup chicken ham, chopped

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a mini muffin pan.
  2. In a bowl, combine flour, baking powder, sugar, and salt.
  3. In another bowl, whisk together milk, egg, and melted butter.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the turkey bacon and chicken ham.
  6. Fill the mini muffin pan with the batter.
  7. Bake for 15-20 minutes or until a toothpick comes out clean.
  8. Allow to cool before serving.

Notes

  • For a sweeter treat, add chocolate chips or blueberries to the batter.
  • Serve with maple syrup for dipping.
