Ingredients

  • 2 cups long-grain rice
  • 1 pound chicken thighs, boneless and skinless
  • 4 cups chicken broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon olive oil
  • 1 cup frozen peas
  • 1 cup carrots, diced

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and garlic, sauté until translucent.
  2. Add the chicken thighs and cook until browned on all sides.
  3. Stir in the rice, paprika, cumin, salt, and pepper.
  4. Add the chicken broth and bring to a boil.
  5. Cover and simmer for 20 minutes, or until the rice is cooked.
  6. Stir in the peas and carrots, cook for an additional 5 minutes.
  7. Remove from heat and let it sit covered for 5 minutes before serving.

Notes

  • For a spicier version, add chili powder or diced jalapeños.
  • Substitute brown rice for extra fiber but adjust cook time accordingly.
