  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • Chocolate shavings for garnish

Instructions

  1. In a shallow bowl, combine brewed coffee and rum.
  2. Quickly dip each gingerbread cookie into the coffee mixture, ensuring they are soaked but not soggy.
  3. In a large bowl, whip heavy cream with powdered sugar, vanilla extract, and spices until soft peaks form.
  4. Fold in the mascarpone cheese gently to maintain the fluffiness.
  5. Layer soaked cookies in a serving dish, followed by a layer of the mascarpone mixture.
  6. Repeat the layers until all ingredients are used, finishing with the mascarpone on top.
  7. Cover and refrigerate for at least 4 hours, preferably overnight.
