A rich and hearty soup that combines creamy potatoes with spicy andouille sausage, perfect for a cozy meal.

  • 2 tablespoons olive oil
  • 1 pound andouille sausage, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, peeled and diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Cajun seasoning
  • Salt to taste
  • Black pepper to taste
  • 2 green onions, sliced (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the sliced andouille sausage and cook until browned.
  2. Add the diced onion and minced garlic, sautéing until the onion is translucent.
  3. Stir in the diced potatoes and chicken broth, bringing to a boil.
  4. Reduce heat and let simmer until potatoes are tender, about 15 minutes.
  5. Use a potato masher to mash some of the potatoes in the pot for a creamier consistency.
  6. Stir in the heavy cream and Cajun seasoning, allowing to heat through.
  7. Season with salt and pepper to taste. Serve hot, garnished with sliced green onions.

Notes

  • For extra spice, add more Cajun seasoning or diced jalapeños.
  • The soup can be made ahead and reheated; the flavors will deepen.
