  • 4 ounces turkey bacon, chopped
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 4 cups chicken broth
  • 1 cup orzo pasta
  • 2 cups cooked chicken, shredded
  • 1 cup frozen peas
  • 1/2 cup heavy cream
  • salt to taste
  • pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
  2. Add onion, garlic, carrots, and celery; sauté until softened.
  3. Stir in thyme, then add chicken broth and bring to a boil.
  4. Add orzo and cook according to package directions.
  5. Stir in shredded chicken, peas, and heavy cream; season with salt and pepper.
  6. Simmer for a few minutes until heated through.
