A comforting and delicious chicken tortilla soup that’s perfect for any occasion.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup bell pepper, chopped
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Tortilla strips for garnish
  • Chopped cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic; sauté until softened.
  3. Stir in cumin and chili powder; cook for another minute.
  4. Add chicken broth, shredded chicken, diced tomatoes, black beans, corn, and bell pepper.
  5. Simmer for 20 minutes.
  6. Add lime juice, and season with salt and pepper.
  7. Serve hot, garnished with tortilla strips and cilantro.

Notes

  • For extra heat, add jalapeños.
  • Can be made ahead and stored in the fridge.
