- 2 pounds baby golden potatoes
- 1 pound smoked sausage, sliced
- 1 cup shredded cheddar cheese
- 1 packet ranch dressing mix
- 1/2 cup sour cream
- 1/4 cup green onions, chopped
- 2 tablespoons olive oil
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the potatoes and olive oil. Toss to coat.
- Add the ranch dressing mix and mix well.
- Spread the potatoes on a baking sheet and bake for 30 minutes.
- After 30 minutes, add the smoked sausage to the baking sheet and stir.
- Bake for an additional 15 minutes.
- Remove from the oven and top with cheddar cheese and green onions. Return to the oven for 5 minutes or until the cheese is melted.
